Description

A savory breakfast stromboli filled with soft scrambled eggs, cooked breakfast sausage, and melted Colby Jack cheese all wrapped in thin crust pizza dough and baked to golden perfection. Stromboli Dough

  • 1 (8-ounce) can thin crust refrigerated pizza dough

Filling

  • 1 pound pork breakfast sausage, cooked, crumbled, and well drained (turkey sausage can be used as an alternative)
  • 8 large eggs, soft scrambled
  • 2 cups shredded Colby Jack cheese (cheddar cheese can be substituted)


Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper to ensure an easy cleanup and to prevent sticking.
  2. Prepare the dough base: Open the can of refrigerated thin crust pizza dough and gently stretch it thin and even on the prepared parchment paper, leaving a roughly 3-inch border around the edges free of filling to allow for proper rolling.
  3. Add the filling layers: Spread the soft scrambled eggs evenly over the stretched dough, avoiding the 3-inch border. Sprinkle the cooked and drained crumbled sausage over the eggs, then evenly distribute the shredded Colby Jack cheese on top, reserving a few tablespoons of cheese to sprinkle later over the top of the stromboli.
  4. Roll the stromboli: Starting from one side, carefully roll the dough over the filling like a jelly roll, using the parchment paper to help guide the roll. Move the stromboli to the center of the baking sheet with the seam side down to seal it well. Stretch and tuck the ends underneath to close the ends tightly.
  5. Score and add topping: Using a sharp knife, cut several diagonal slits into the top crust to allow steam to escape during baking. Sprinkle the remaining cheese over the top of the stromboli for a golden, cheesy crust.
  6. Bake to perfection: Bake the stromboli in the preheated oven for 20 to 30 minutes or until the crust is golden brown and cooked through.
