Instructions
- Make the blueberry swirl: In a small saucepan over medium heat, combine blueberries, sugar, and lemon juice. Stir occasionally until the berries begin to break down and the mixture bubbles, about 5–7 minutes. Stir in the cornstarch and cook for 1 more minute until thickened. Remove from heat and let cool completely.
- Prepare the cookie dough: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Chill the dough in the refrigerator for 30 minutes.
- Assemble the cookies: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. On a lightly floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick. Spread the cooled blueberry filling evenly over the dough, then carefully roll up the dough jelly-roll style.
- Slice and bake: Slice the rolled dough into 1/2-inch thick rounds and place them spaced apart on the prepared baking sheets. Bake for 10–12 minutes or until the edges are lightly golden. Remove from the oven and cool the cookies on a wire rack.
