A delicious twist on the classic BLT sandwich, this BLT Pasta Salad combines crispy bacon, juicy tomatoes, and crunchy lettuce with pasta and a creamy dressing for a perfect summer side dish.
Ingredients
- 12 oz rotini pasta
- 1 lb bacon, cooked and crumbled
- 2 cups cherry tomatoes, halved
- 2 cups chopped romaine lettuce
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp white vinegar
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 green onions, sliced
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water. Set aside.
- In a large skillet, cook bacon until crispy. Drain on paper towels and crumble.
- In a small bowl, whisk together mayonnaise, sour cream, white vinegar, garlic powder, salt, and pepper to make the dressing.
- In a large bowl, combine cooked pasta, crumbled bacon, cherry tomatoes, lettuce, and green onions.
- Pour dressing over the pasta mixture and toss to coat evenly.
- Chill for at least 30 minutes before serving for best flavor.
Notes
- Wait to add lettuce until just before serving to maintain its crunch.
- You can substitute Greek yogurt for sour cream for a lighter dressing.
- Use grape tomatoes for a slightly sweeter flavor.
