Description

A delicious twist on the classic BLT sandwich, this BLT Pasta Salad combines crispy bacon, juicy tomatoes, and crunchy lettuce with pasta and a creamy dressing for a perfect summer side dish.


Ingredients

  • 12 oz rotini pasta
  • 1 lb bacon, cooked and crumbled
  • 2 cups cherry tomatoes, halved
  • 2 cups chopped romaine lettuce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp white vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 green onions, sliced


Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water. Set aside.
  2. In a large skillet, cook bacon until crispy. Drain on paper towels and crumble.
  3. In a small bowl, whisk together mayonnaise, sour cream, white vinegar, garlic powder, salt, and pepper to make the dressing.
  4. In a large bowl, combine cooked pasta, crumbled bacon, cherry tomatoes, lettuce, and green onions.
  5. Pour dressing over the pasta mixture and toss to coat evenly.
  6. Chill for at least 30 minutes before serving for best flavor.

Notes

  • Wait to add lettuce until just before serving to maintain its crunch.
  • You can substitute Greek yogurt for sour cream for a lighter dressing.
