Description

This Blooming Quesadilla Ring is a fun, crowd-pleasing appetizer made with cheesy chicken quesadillas arranged in a circle and baked until golden. Perfect for game day, parties, or anytime you want a dish that looks as amazing as it tastes!


Ingredients

For the Quesadillas:

  • 3 cups cooked shredded chicken

  • 1 1/2 cups shredded cheddar cheese

  • 1 1/2 cups shredded Monterey Jack cheese

  • 1/2 cup diced red bell pepper

  • 1/2 cup diced green onions

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 12 small flour tortillas (6-inch size)

  • Cooking spray or melted butter (for brushing)

For Serving:

  • Sour cream

  • Salsa or pico de gallo

  • Guacamole


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a large bowl, mix shredded chicken, both cheeses, bell pepper, green onions, and all spices until well combined.

  3. Cut each tortilla in half. Scoop about 2 tablespoons of the chicken mixture onto each half and fold into a triangle.

  4. Arrange the filled tortillas in a circular ring on the baking sheet, overlapping the corners so they form a wreath shape.

  5. Brush the tops with cooking spray or melted butter for a golden finish.

  6. Bake for 20–25 minutes, or until the tortillas are golden brown and the cheese is melted.

  7. Carefully transfer the ring to a serving platter. Place bowls of salsa, guacamole, and sour cream in the center.

  8. Serve warm and enjoy!


Notes

  • You can swap chicken for ground beef or keep it vegetarian with beans and veggies.

  • Add jalapeños for a spicy kick.

  • This recipe is great for using up leftover rotisserie chicken.
