Description

These Blackberry, Pineapple, and Coconut Swirl Italian Ice Pops are a refreshing, vegan, and gluten-free summer dessert. Blackberry Puree

  • 1 cup fresh or frozen blackberries

Base Mixture

  • 1 ½ cups pineapple juice
  • 1 ½ cups canned full-fat coconut milk (well-shaken)
  • 2 tablespoons sugar or sweetener of choice
  • 1 teaspoon vanilla extract


Instructions

  1. Puree the blackberries: In a blender, puree the blackberries until smooth. For a smoother texture, strain the puree through a fine mesh sieve to remove the seeds. Stir in honey or maple syrup to sweeten, adjusting according to your taste preference.
  2. Prepare the pineapple-coconut mixture: In a separate bowl, whisk together the pineapple juice, well-shaken coconut milk, sugar, and vanilla extract until everything is thoroughly combined and slightly creamy.
  3. Assemble the ice pops: Alternate spoonfuls of the blackberry puree and the pineapple-coconut mixture into ice pop molds. Use a skewer or knife to gently swirl the mixtures together, creating a beautiful marbled effect without fully blending the layers.
  4. Freeze the pops: Insert the ice pop sticks and place the molds in the freezer. Freeze for at least 6 hours or overnight until the ice pops are completely solid.
  5. Serve: To release the ice pops from the molds, briefly run the outside of the molds under warm water. Gently pull the pops out and enjoy your refreshing treat.

Notes

  • You can swap blackberries for raspberries or blueberries for a different berry flavor.
