Description

Ingredients

  • 1 head Romaine lettuce, chopped
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup pepperoncini, sliced
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the chopped Romaine lettuce, cucumber, cherry tomatoes, red onion, olives, mozzarella, and pepperoncini.
