Ingredients
- 1 head Romaine lettuce, chopped
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup pepperoncini, sliced
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped Romaine lettuce, cucumber, cherry tomatoes, red onion, olives, mozzarella, and pepperoncini.
