- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 4 medium potatoes, peeled and diced
- 6 ounces chorizo or linguiça sausage, sliced
- 4 cups chopped kale
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft, about 5 minutes.
- Pour in the broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Using a potato masher or immersion blender, slightly mash the potatoes in the broth to thicken the soup.
- Add the sliced chorizo and cook for another 5 minutes to release the flavor.
- Stir in the chopped kale and cook until tender, about 5-10 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a vegetarian version, use vegetable broth and omit the sausage or use a plant-based alternative.
- Collard greens or Swiss chard can be substituted for kale.
- Adjust thickness by mashing more or fewer potatoes.
