Description

Tender and juicy grilled ribs with a flavorful smoky crust, perfect for BBQ gatherings or summer cookouts.


Ingredients

  • 2 racks of pork baby back ribs (about 45 lbs total)
  • 1/4 cup brown sugar
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 cup apple cider vinegar
  • 1/2 cup BBQ sauce (plus more for serving)

Instructions

  1. Preheat the grill to medium heat (about 300°F) and set up for indirect grilling.
  2. Remove the membrane from the back of the ribs and pat dry with paper towels.
  3. In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne.
  4. Rub the spice mixture evenly over both sides of the ribs.
  5. Wrap the ribs in foil and place on the grill away from direct heat. Close the lid and cook for 2 hours.
  6. After 2 hours, carefully remove the ribs from the foil and brush with apple cider vinegar and BBQ sauce.
  7. Return ribs to the grill over direct heat and cook for 10-15 minutes, flipping and basting with BBQ sauce until caramelized.
  8. Remove from grill, let rest for 10 minutes, then slice and serve with extra sauce.

Notes

  • Use a meat thermometer to ensure internal temperature reaches at least 190°F for tender ribs.
  • Letting the ribs rest helps redistribute the juices for better flavor.
  • Customize the rub by adding your favorite spices or herbs.
