Ingredients
- 2 racks baby back ribs (about 4–5 pounds)
- 1/4 cup yellow mustard
- 1/4 cup brown sugar
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp ground black pepper
- 1 tsp salt
- 1/2 tsp cayenne pepper (optional)
- 1 cup barbecue sauce (plus more for serving)
Instructions
- Remove the membrane from the back of the ribs and pat them dry.
- Rub the ribs with mustard to help the seasoning stick.
- In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne.
- Generously rub the seasoning mix all over the ribs.
- Preheat grill to medium heat (about 300°F) and set up for indirect cooking.
- Place the ribs bone-side down on the cooler side of the grill, cover, and cook for 2 hours, turning occasionally.
- Brush ribs with barbecue sauce and move them to the hotter side of the grill.
- Grill for another 15–20 minutes, brushing with more sauce and flipping occasionally, until caramelized and tender.
- Remove from grill, let rest for 5 minutes, then slice and serve.
Notes
- Use indirect heat to avoid burning the ribs.
- Wrap ribs in foil for part of the cook if you want even more tenderness.
- Use a meat thermometer to ensure internal temperature reaches at least 190°F for tender ribs.
