Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, paprika, and oregano.
  3. Place the chicken in a resealable plastic bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 30 minutes, up to 4 hours.
  4. Preheat the grill to medium-high heat.
  5. Remove chicken from marinade and discard the marinade.
  6. Grill chicken breasts for 6-8 minutes per side, or until internal temperature reaches 165°F (75°C).
  7. Remove from grill and let rest for 5 minutes before slicing and serving.

  • Do not overcook to prevent dryness.
  • Use a meat thermometer for best results.
  • Marinate longer for more flavor.
