Description

This Grilled Cheese Burrito is a cheesy, spicy, and hearty Taco Bell copycat that’s even better homemade! Loaded with seasoned beef, rice, chipotle sauce, nacho cheese, sour cream, and a crispy grilled cheese crust, it’s everything you love in one warm, melty wrap.


Ingredients

  • For the burrito filling:

    • 1 lb ground beef

    • 1 packet taco seasoning

    • 1/2 cup water

    • 1 cup cooked seasoned rice (Mexican or Spanish rice)

    • 1/2 cup nacho cheese sauce (store-bought or homemade)

    • 1/2 cup sour cream

    • 1/2 cup shredded cheddar cheese

    • 1/2 cup chipotle sauce (or spicy ranch)

    • 1/2 cup Fritos or tortilla strips (optional for crunch)

    • 4 large flour tortillas (burrito-size)

  • For the grilled cheese topping:

    • 1 cup shredded cheddar cheese

    • 1/2 cup shredded Monterey Jack cheese

    • 1 tbsp butter (for greasing the pan)


Instructions

  1. Cook the beef:
    In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat, then stir in taco seasoning and water. Simmer for 5 minutes until thickened.

  2. Assemble the burritos:
    Lay out a tortilla. In the center, layer seasoned rice, taco beef, nacho cheese, sour cream, chipotle sauce, shredded cheddar, and Fritos or tortilla strips if using. Roll tightly into a burrito.

  3. Add grilled cheese topping:
    Mix cheddar and Monterey Jack cheese. Sprinkle about 1/4 cup onto a non-stick skillet over medium heat. Let it melt and begin to brown slightly.

  4. Grill the burrito:
    Place the burrito seam-side down on top of the melting cheese. Press gently. Let it cook for 2–3 minutes until the cheese sticks and gets crispy. Carefully remove and repeat for remaining burritos.

  5. Serve:
    Slice in half and serve hot with extra chipotle sauce or sour cream for dipping.


Notes

  • You can swap ground beef for ground turkey or even black beans for a vegetarian option.

  • To make it spicier, add jalapeños or use a spicy chipotle sauce.
