This is a quick and easy banana pudding recipe, perfect for any occasion. It features layers of creamy pudding, fresh bananas, and crispy vanilla wafers, topped with whipped cream for a delightful treat.
Ingredients
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup sugar
- 1/3 cup cornstarch
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 4 large egg yolks
- 3 ripe bananas, sliced
- 1 box vanilla wafer cookies
- Whipped cream (for topping)
Instructions
- In a medium saucepan, combine the milk, heavy cream, sugar, cornstarch, and salt. Cook over medium heat, whisking constantly, until the mixture begins to thicken.
- In a separate bowl, whisk the egg yolks. Gradually add a little of the hot mixture to the egg yolks to temper them, then pour the egg yolks back into the saucepan, whisking constantly.
- Continue to cook for 1-2 more minutes until the pudding thickens. Remove from heat and stir in the vanilla extract.
- In a 9×13-inch baking dish, layer the vanilla wafer cookies, followed by a layer of banana slices.
- Pour half of the pudding mixture over the banana layer, and repeat with another layer of cookies, bananas, and pudding.
- Top with whipped cream and chill for at least 4 hours before serving.
Notes
- Make sure to allow the pudding to cool slightly before layering with the bananas to prevent them from getting mushy.
- This dessert can be made a day in advance for even better flavor.
- You can use sugar-free pudding mix and wafers for a lighter version.
