Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 large egg yolks
  • 3 ripe bananas, sliced
  • 1 box vanilla wafer cookies
  • Whipped cream (for topping)


Instructions

  1. In a medium saucepan, combine the milk, heavy cream, sugar, cornstarch, and salt. Cook over medium heat, whisking constantly, until the mixture begins to thicken.
  2. In a separate bowl, whisk the egg yolks. Gradually add a little of the hot mixture to the egg yolks to temper them, then pour the egg yolks back into the saucepan, whisking constantly.
  3. Continue to cook for 1-2 more minutes until the pudding thickens. Remove from heat and stir in the vanilla extract.
  4. In a 9×13-inch baking dish, layer the vanilla wafer cookies, followed by a layer of banana slices.
  5. Pour half of the pudding mixture over the banana layer, and repeat with another layer of cookies, bananas, and pudding.
  6. Top with whipped cream and chill for at least 4 hours before serving.
