Beef Lombardi Casserole is a comforting, cheesy ground beef casserole layered with noodles, tomatoes, and a creamy mixture, perfect for family dinners or make-ahead meals.
Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 8 oz egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 1/4 cup chopped green onions
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef, chopped onion, and garlic over medium heat until meat is browned. Drain excess fat.
- Add diced tomatoes, tomato paste, salt, pepper, oregano, and basil. Simmer for 15 minutes.
- Meanwhile, cook egg noodles according to package directions; drain.
- In a separate bowl, mix sour cream, cottage cheese, and green onions.
- In a greased 9×13 inch baking dish, layer half of the noodles, half of the sour cream mixture, half of the beef mixture, and half of the cheddar cheese. Repeat layers.
- Bake uncovered for 25-30 minutes or until bubbly and cheese is melted.
- Let sit for 5-10 minutes before serving.
Notes
- This dish can be made ahead and refrigerated or frozen before baking.
- Feel free to use ricotta cheese instead of cottage cheese for a smoother texture.
- Top with chopped parsley for a fresh finish.
