Description

Beef Lombardi Casserole is a comforting, cheesy ground beef casserole layered with noodles, tomatoes, and a creamy mixture, perfect for family dinners or make-ahead meals.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1/4 cup chopped green onions
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef, chopped onion, and garlic over medium heat until meat is browned. Drain excess fat.
  3. Add diced tomatoes, tomato paste, salt, pepper, oregano, and basil. Simmer for 15 minutes.
  4. Meanwhile, cook egg noodles according to package directions; drain.
  5. In a separate bowl, mix sour cream, cottage cheese, and green onions.
  6. In a greased 9×13 inch baking dish, layer half of the noodles, half of the sour cream mixture, half of the beef mixture, and half of the cheddar cheese. Repeat layers.
  7. Bake uncovered for 25-30 minutes or until bubbly and cheese is melted.
  8. Let sit for 5-10 minutes before serving.

Notes

  • This dish can be made ahead and refrigerated or frozen before baking.
  • Feel free to use ricotta cheese instead of cottage cheese for a smoother texture.
  • Top with chopped parsley for a fresh finish.
