Description

This BBQ Cauliflower Bites Bowl is a flavor-packed, plant-based meal that’s both healthy and satisfying. Crispy baked cauliflower bites coated in tangy BBQ sauce are served over a bed of fluffy rice and fresh veggies, topped with a creamy ranch drizzle. It’s perfect for lunch, dinner, or meal prep!


Ingredients

For the Cauliflower Bites:

  • 1 medium head cauliflower, cut into bite-sized florets

  • 1/2 cup all-purpose flour

  • 1/2 cup water

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 2/3 cup BBQ sauce

For the Bowl:

  • 2 cups cooked rice (white, brown, or cauliflower rice)

  • 1 cup shredded lettuce

  • 1/2 cup shredded carrots

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup sliced red onion

  • 1 avocado, sliced

Optional Toppings:

  • Vegan ranch or regular ranch dressing

  • Fresh cilantro

  • Lime wedges


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together flour, water, garlic powder, paprika, salt, and pepper to make a smooth batter.

  3. Toss cauliflower florets in the batter until fully coated. Shake off excess and spread on the baking sheet in a single layer.

  4. Bake for 20–25 minutes, flipping halfway, until golden and tender.

  5. Remove from the oven and toss baked cauliflower in BBQ sauce until coated. Return to the oven for another 10 minutes to caramelize.

  6. While cauliflower is baking, prep the rice and veggies for the bowls.

  7. Assemble each bowl with a base of rice, then top with BBQ cauliflower, lettuce, carrots, tomatoes, red onion, and avocado.

  8. Drizzle with ranch dressing and garnish with cilantro and lime if desired. Serve immediately.


Notes

  • For extra crispiness, bake cauliflower bites longer before adding BBQ sauce.

  • Use store-bought or homemade BBQ sauce, depending on your preference.

 

  • This bowl is great for meal prep—just store the cauliflower and rice separately to keep the texture fresh.
