Ingredients
-
2 lbs boneless, skinless chicken breasts (cut into cubes)
-
1 cup beer (lager or pale ale works best)
-
1/4 cup olive oil
-
1/4 cup soy sauce
-
3 tbsp brown sugar
-
2 tbsp Dijon mustard
-
2 cloves garlic (minced)
-
1 tbsp lemon juice
-
1 tsp smoked paprika
-
1/2 tsp black pepper
-
1/4 tsp salt
-
1/2 cup BBQ sauce (your favorite brand)
-
Wooden or metal skewers
Instructions
-
Marinate the Chicken: In a large bowl, whisk together the beer, olive oil, soy sauce, brown sugar, Dijon mustard, garlic, lemon juice, smoked paprika, salt, and pepper.
-
Add the chicken cubes to the marinade and stir to coat evenly. Cover and refrigerate for at least 1 hour (or up to overnight for more flavor).
-
Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat the grill to medium-high heat.
-
Assemble the Skewers: Thread the marinated chicken pieces onto the skewers.
-
Grill the Chicken: Place the skewers on the grill and cook for 5-7 minutes per side, or until the chicken is fully cooked (internal temperature should reach 165°F). Brush with BBQ sauce during the last few minutes of grilling.
-
Serve: Remove the chicken from the skewers and serve immediately with extra BBQ sauce on the side.
Notes
-
You can substitute the chicken breasts with chicken thighs for a juicier option.
-
Adjust the BBQ sauce amount depending on your desired sweetness and tanginess.
-
Serve with grilled vegetables, rice, or a fresh salad for a complete meal.
