Description

A delicious and comforting dessert made with ripe bananas and bread, baked into a rich and custardy pudding.


Ingredients

  • 4 cups cubed day-old bread
  • 2 ripe bananas, mashed
  • 2 cups milk
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup melted butter
  • 1/4 tsp salt


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish lightly with butter.
  2. In a large bowl, whisk together the milk, eggs, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
  3. Stir in the mashed bananas and melted butter until well combined.
  4. Add the cubed bread to the mixture and gently fold until all the bread is soaked.
  5. Let the mixture sit for about 10 minutes to allow the bread to fully absorb the custard.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 45-50 minutes or until the top is golden brown and a knife inserted in the center comes out clean.
  8. Allow to cool slightly before serving. Serve warm or chilled.

Notes

  • You can add raisins, nuts, or chocolate chips for extra flavor.
  • Great way to use overripe bananas and leftover bread.
