Description

This Baked Parmesan Crusted Salmon with Mayo is a quick and flavorful dinner option, featuring tender salmon fillets topped with a creamy mayo and parmesan crust for a deliciously crispy finish.

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Place the salmon fillets skin-side down on the prepared baking sheet and season with salt and pepper.
  3. In a small bowl, mix together the mayonnaise, Parmesan cheese, lemon juice, garlic powder, and paprika.
  4. Spread the mayo mixture evenly over the top of each salmon fillet.
  5. Sprinkle panko breadcrumbs over the mayo mixture and gently press down to adhere.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and the topping is golden brown.
  7. Optionally, broil for an additional 1-2 minutes for extra crispiness.
  8. Remove from oven, garnish with chopped parsley, and serve immediately.

Notes

  • Use fresh salmon for best results, but thawed frozen fillets work well too.
  • You can substitute panko with regular breadcrumbs if desired.
  • Serve with steamed vegetables or a light salad for a complete meal.
