Description

This Baked Denver Omelet is a hearty and flavorful breakfast casserole combining diced ham, sautéed bell peppers and onions, eggs, and sharp cheddar cheese baked to fluffy perfection. Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 400°F (200°C). Spray a 7 by 11-inch or 9 by 9-inch baking dish with cooking spray to prevent sticking. Evenly sprinkle the chopped ham in a single layer at the bottom of the baking dish.
  2. Sauté vegetables: Heat olive oil in a skillet over medium-high heat until hot. Add the chopped red and green bell peppers and yellow onion. Cook, stirring occasionally, until the vegetables are softened and fragrant, about 4 minutes. Evenly spread this cooked pepper and onion mixture over the ham layer in the baking dish. Then, sprinkle the shredded sharp cheddar cheese evenly on top.
  3. Mix eggs and pour: In a large bowl, whisk together the eight eggs and milk until fully blended. Season the mixture with salt and freshly ground black pepper to taste, stirring well. Carefully pour this egg mixture evenly over the layered ingredients in the baking dish.
  4. Bake until set: Place the baking dish in the preheated oven and bake until the omelet is puffy, fully set, and lightly golden on top, about 22 to 25 minutes. Remove from oven and let it cool slightly before slicing.
