Description

Baked Apple Pie Rice Paper Rolls offer a delightful twist on classic apple pie, encasing a warm spiced apple filling inside crispy baked rice paper wrappers. Perfectly golden and lightly sweetened, these easy-to-make dessert rolls combine the comforting flavors of cinnamon, nutmeg, and brown sugar with a crisp texture, ideal for fall or anytime you crave a light treat.

Ingredients

Scale

Filling

  • 3 medium apples, peeled, cored, and finely diced
  • 1/4 cup brown sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup water

Assembly

  • 8 rice paper wrappers
  • 2 tablespoons unsalted butter, melted
  • Cooking spray or additional melted butter for brushing

Instructions

  1. Preheat Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper to prepare for baking the rolls.
  2. Make Apple Filling: In a medium saucepan over medium heat, combine diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, cornstarch, and water. Cook for 5 to 7 minutes, stirring frequently, until the apples soften and the mixture thickens. Remove from heat and let cool slightly.
  3. Soften Rice Paper: Fill a shallow dish with warm water and dip one rice paper wrapper into the water for about 10 seconds until softened. Lay the softened wrapper flat on a clean surface.
  4. Fill and Roll: Spoon 2 to 3 tablespoons of the apple filling onto the lower third of the rice paper wrapper. Fold the sides inward, then roll tightly like a burrito, sealing the edges. Place the roll seam side down on the prepared baking sheet.
  5. Repeat: Repeat the softening, filling, and rolling process with all remaining wrappers and filling.
  6. Brush with Butter: Lightly brush or spray the tops of the rolls with melted butter or cooking spray to promote browning.
  7. Bake Rolls: Bake for 15 to 18 minutes or until the rolls turn golden and crisp. Turn them halfway through baking for even browning.
  8. Cool and Serve: Allow the baked apple pie rice paper rolls to cool slightly before serving. Optionally dust with powdered sugar and serve warm with whipped cream or vanilla yogurt.

Notes

  • For extra sweetness, lightly dust the rolls with powdered sugar after baking.
  • These rolls are best enjoyed warm and can be served with whipped cream or vanilla yogurt for added richness.
  • If the rice paper sticks while rolling, lightly dampen your hands to make handling easier.
