A fresh and hearty Autumn Harvest Salad packed with seasonal ingredients like roasted butternut squash, apples, pecans, and goat cheese, perfect for a healthy fall meal.
Ingredients
- 4 cups mixed salad greens
- 1 cup roasted butternut squash, cubed
- 1 apple, thinly sliced
- 1/4 cup dried cranberries
- 1/4 cup crumbled goat cheese
- 1/4 cup candied or toasted pecans
- 2 tablespoons pumpkin seeds (optional)
- 2 tablespoons balsamic vinaigrette
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper. Roast for 20–25 minutes or until tender and slightly caramelized. Let cool.
- In a large bowl, combine mixed salad greens, roasted squash, apple slices, dried cranberries, goat cheese, pecans, and pumpkin seeds (if using).
- Drizzle with balsamic vinaigrette and gently toss to coat evenly.
- Serve immediately and enjoy!

- You can substitute feta cheese for goat cheese if preferred.
