Ingredients

  • 1 lb ground beef

  • 1 cup uncooked long grain white rice

  • 2 cups beef broth

  • 1 cup diced carrots

  • 1 cup diced celery

  • 1 small onion, chopped

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1/2 tsp dried thyme

  • 1/2 tsp paprika

  • 1 tbsp Worcestershire sauce

  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large skillet, cook the ground beef over medium heat until no longer pink. Drain any excess grease.

  3. In a large mixing bowl, combine the cooked beef, uncooked rice, beef broth, diced carrots, celery, onion, tomatoes (with juice), cream of mushroom soup, and all the seasonings.

  4. Mix until everything is evenly combined.

  5. Pour the mixture into a greased 9×13-inch baking dish.

  6. Cover tightly with foil and bake for 1 hour.

  7. Remove foil, stir the casserole, and top with shredded cheddar cheese if using.

  8. Bake uncovered for an additional 10–15 minutes, until the cheese is melted and the rice is tender.

  9. Let sit for 5 minutes before serving.

Notes

  • You can swap ground beef for ground turkey or chicken.

  • Add chopped zucchini or squash for extra veggies.

  • This dish freezes well—perfect for meal prep.
