Description

These Air Fryer Lemon Pepper Chicken Skewers are juicy, zesty, and full of flavor. Perfect for a quick weeknight meal or a healthy appetizer.


Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • Wooden or metal skewers


Instructions

  1. Soak wooden skewers in water for 30 minutes if using wooden skewers.
  2. In a large bowl, combine olive oil, lemon juice, lemon zest, black pepper, garlic powder, onion powder, and salt.
  3. Add chicken pieces to the bowl and toss to coat evenly. Let marinate for at least 15-30 minutes.
  4. Thread marinated chicken pieces onto the skewers.
  5. Preheat the air fryer to 380°F (193°C) for 3-5 minutes.
  6. Place the skewers in the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway through, until chicken is cooked through and lightly browned.
  7. Remove from air fryer and let rest for a couple of minutes before serving.

Notes

  • Use chicken thighs for a juicier option.
  • Add chopped bell peppers or onions to the skewers for extra flavor and color.
  • Serve with rice, salad, or in pita bread with tzatziki.
