These Air Fryer Lemon Pepper Chicken Skewers are juicy, zesty, and full of flavor. Perfect for a quick weeknight meal or a healthy appetizer.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 30 minutes if using wooden skewers.
- In a large bowl, combine olive oil, lemon juice, lemon zest, black pepper, garlic powder, onion powder, and salt.
- Add chicken pieces to the bowl and toss to coat evenly. Let marinate for at least 15-30 minutes.
- Thread marinated chicken pieces onto the skewers.
- Preheat the air fryer to 380°F (193°C) for 3-5 minutes.
- Place the skewers in the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway through, until chicken is cooked through and lightly browned.
- Remove from air fryer and let rest for a couple of minutes before serving.
Notes
- Use chicken thighs for a juicier option.
- Add chopped bell peppers or onions to the skewers for extra flavor and color.
- Serve with rice, salad, or in pita bread with tzatziki.
