Description

A quick and easy meal made with juicy chicken and crispy potatoes, all cooked to perfection in the air fryer for a healthier option.


Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 3 medium potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 tsp onion powder
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the air fryer to 380°F (193°C).
  2. In a large bowl, mix chicken thighs and diced potatoes with olive oil, garlic powder, paprika, oregano, onion powder, salt, and pepper.
  3. Place the seasoned chicken and potatoes in the air fryer basket in a single layer.
  4. Cook for 20-25 minutes, shaking the basket halfway through to ensure even cooking.
  5. Check that the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from air fryer and let rest for 5 minutes before serving.
  7. Garnish with fresh parsley if desired and serve hot.

Notes

  • You can use chicken breasts instead of thighs, but adjust the cooking time accordingly.
  • Yukon gold or red potatoes work best for crispy texture.
  • Try adding other veggies like bell peppers or carrots for more variety.
