A quick and easy meal made with juicy chicken and crispy potatoes, all cooked to perfection in the air fryer for a healthier option.
Ingredients
- 1 lb chicken thighs, boneless and skinless
- 3 medium potatoes, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 tsp onion powder
- Fresh parsley for garnish (optional)
Instructions
- Preheat the air fryer to 380°F (193°C).
- In a large bowl, mix chicken thighs and diced potatoes with olive oil, garlic powder, paprika, oregano, onion powder, salt, and pepper.
- Place the seasoned chicken and potatoes in the air fryer basket in a single layer.
- Cook for 20-25 minutes, shaking the basket halfway through to ensure even cooking.
- Check that the chicken reaches an internal temperature of 165°F (74°C).
- Remove from air fryer and let rest for 5 minutes before serving.
- Garnish with fresh parsley if desired and serve hot.
Notes
- You can use chicken breasts instead of thighs, but adjust the cooking time accordingly.
- Yukon gold or red potatoes work best for crispy texture.
- Try adding other veggies like bell peppers or carrots for more variety.
