1 pound Italian sausage (mild or spicy), casings removed

1 small yellow onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 zucchini, chopped

1 red bell pepper, chopped

1 teaspoon Italian seasoning

1/2 teaspoon dried basil

Salt and pepper, to taste

6 cups chicken broth

1 (14.5 oz) can diced tomatoes, undrained

1 cup cooked white rice (or brown rice)

2 cups fresh spinach or kale, roughly chopped

Instructions

Heat olive oil in a large pot over medium heat.

Add Italian sausage and cook until browned, breaking it apart as it cooks.

Stir in onion and garlic; sauté for 2–3 minutes until fragrant.

Add carrots, celery, zucchini, and bell pepper. Cook for about 5 minutes, stirring occasionally.

Season with Italian seasoning, basil, salt, and pepper.

Pour in chicken broth and diced tomatoes. Bring to a boil.

Reduce heat and simmer for 10–12 minutes, or until vegetables are tender.
